From Ben Geer at Grace Lutheran Church in Mankato
At Grace, we are very thankful for the $500 food ministry grant from the Synod. Combined with another food grant, the money is making a big impact on the way Grace is able to feed the hungry. With the funds, we’ve purchased containers to package meals, two instant pots, extra ingredients to make ‘heat and eat' meals, as well as a freezer to keep at our local boys and girls club so they can have meals in stock and ready for families to take home.
Part of the ministry is in partnership with the South Central Minnesota Food Recovery Program in Mankato. Through this program, lean proteins and fresh produce are prevented from going into landfills or compost. Grace volunteers are able to use the saved ingredients to create meals – chicken fajitas, chicken zucchini casserole - in the church kitchen. Along with homemade banana bread and jellies, Grace has provided food throughout Mankato. We're excited to continue to watch this ministry grow!
